Winemaking Process 

The Aleatico is whole cluster pressed, and the pressing is done lightly so as to not extract more color than desired. We prefer to see this as an off-white wine rather than a rose or red wine. The juice sees a quick settling before moving to a tank. The primary fermentation is done cool and slow to lift the aromatics typical of the muscat varietal. Malolactic fermentation was blocked to retain acidity and the wine was locked down in stainless steel vessels for 4 months of aging before bottling in February 2018. 

Tasting Notes

Aleatico is a Corsican black muscat variety once the favorite wine of Neapolitan Bonaparte. We've put a new twist on it by making it a dry aromatic white wine. Honey in color, with a full range aromatics including nutmeg, ripe peaches and honeysuckle. Pleasantly dry and crisp. It is approachable and must be tasted to be believed.
